Cole Slaw:

1 bag of  cole slaw mix (shredded cabbage, carrots)
2 tablespoons minced onion
1/3 cup of sugar
1/2 teaspoon salt
1/8 teaspoon black pepper
1 1/2 tablespoon white vinegar
2 1/2 tablespoons lemon juice
1/4 cup milk
1/4 cup buttermilk
1/2 cup mayo

Mix everything except cole slaw mix and onion in a large bowl until well blended.   Add the rest of the ingredients, stir to completely cover.  Into the chill chest for at least 2 hours.

Bacon Ranch Potato Salad:
2 1/2 pounds potatoes, cubed and boiled until tender
1/2 lb bacon, fried crispy
1 small onion, roughly chopped
1/2 bottle bacon ranch salad dressing
1 tablespoon mayo
1 tablespoon mustard

Mix well and enjoy

Root Beer Baked Beans:

36oz baked beans
1 small onion diced
1/4 cup BBQ sauce
1/2 cup root beer (see post!)
1/2 teaspoon dry mustard
4 drops hot sauce

Fry bacon and onion until bacon is cooked and onions are translucent. Add to baked beans, then stir in the rest of the ingredients.  Cook over medium heat for 20 minutes.  Enjoy!

Jalapeno Hushpuppies:

2 cups yellow cornmeal
1 cup flour
½ teaspoon black ground pepper
1 teaspoon baking powder
2/3 teaspoon baking soda
2 tablespoon white sugar

Mix well then add

2 eggs
1 cup buttermilk
1/8 cup bacon grease

mix again then add

1 jalapeno seeded and minced

Form into balls

Deep dried in oil at 350º
Remove when golden brown and delicious
Drain on paper towels

Fried Pickle Chips

1 cup buttermilk
2 cups yellow corn meal
1 tablespoon flour


Mix buttermilk and flour to make a batter
Dip pickle chips in batter, then corn meal
Deep fry at 350º until golden brown and delicious

Atomic Jalapeno Rockets:

1 package cream cheese (softened)

1 tablespoon seasoning salt

Mix well

Half 6 jalapenos, seed and remove rib (the more you leave in the hotter it will be)

Fill with cream cheese mix

Wrap with half a bacon slice

Cook in smoker or on grill for about 30 minutes

Or in the oven at 350° 10-15 minutes or until bacon is crispy

Turkey Salad:

1 small onion- red preferred, diced

1 smoked turkey breast chopped

mayo to taste.

Mix together in a bowl, eat on sandwich or spread on crackers.

Hoppy’s Salsa…My way!

1 or more jalapenos

fresh cilantro chopped

½ onion chopped

5 tomatoes chopped

2 cloves garlic minced

2 green onions chopped

Mix and allow to rest for at least an hour.


Herb Dip:
1 tbl basil

1 tbl parsley

1 tbl chopped garlic

1 tea thyme & oregano

ground black pepper to taste

½ tea sea salt & rosemary

¼ tea red pepper flakes

Mix well, then add ½ tea olive oil.

Store in fridge in airtight container until ready to use.

Fatty:

1 lb ground sausage… any flavor

chopped onions, red pepper mushrooms…you name it, it will work

you could add some grated cheese at this point.

Roll carefully

Optional : take a pound of bacon and weave it together like a net. place sausage roll on bacon net and wrap

Coat in rub and put in a smoker at 225°-250° for about 90 minutes, until sausage (and/or bacon) is done.

Potato chips-Buffalo style:

4-5 potatoes thinly sliced, well drained

deep fy at 350° until golden brown

dry on paper towels

Mix 2 tbl melted butter with 2 tbl hot sauce and pour over chips

sprinkle with blue cheese crumbles
